Spanish tapas at Disney Springs from José Andrés. Thirty-two tapas averaged $16.97 in September 2026 and the paellas are priced by the pan, not the plate — $69 to $195 feeding four to eight. Disney's "$15 to $34.99 per adult" band is right, which is unusual, and only if you share.

Is it worth the money?
Yes, and it is the most interesting food at Disney Springs — but only if your table shares, and the bill punishes you for not.
The band is honest here, which is rare enough to say out loud. Disney lists Jaleo at $15 to $34.99 per adult. The tapas median is $15, and a paella at its intended party size is $16.25 to $20.62 a head. Compare that to Bourbon Steak, banded one tier higher at $35 to $59.99 with sixteen Bourbon Steak mains averaging $87.50 on the same day. The sticker prices at Jaleo look frightening and the per-person cost is not.
Eat it the way it is built. Four people ordering six tapas to share and one paella between them pays roughly $120 for the paella plus $100 of tapas — about $55 a head before drinks. Four people each ordering a large plate pays $35 to $145 each and misses the point entirely.
The Cirque du Soleil dining package is $45 per person as a prix fixe, which is the cheapest structured way to eat here and is bookable when the show is.
Do not order the $195 paella by accident. It is listed alongside the others and is a different proposition — a whole dry-aged ribeye on top of a paella for two to four, at $48.75 a head even at its largest party size.
And Disney's own page still calls it "coming soon to Disney Springs" in its description, years after it opened. That copy is stale, not a sign that anything is changing.
Against the other Disney Springs signatures, this is the one doing something you cannot get elsewhere on property. Whether you love it depends entirely on whether your table enjoys eating out of the middle.
Who it’s right for
Groups of four or more, who get the paella maths working for them. Adventurous eaters. Anyone at Disney Springs for Cirque du Soleil. Vegetarians and pescatarians. Anyone who wants a $5 first bite rather than a $26 appetiser.
Who it’s wrong for
Two people who both want their own main — the economics collapse. Anyone avoiding pork. Fussy children, though there is a kids' menu from $6. Anyone in a hurry, because the paella takes 45 minutes. And anyone who reads a $165 line and books elsewhere without noticing it feeds eight.
What is actually good

Thirty-two tapas, $5 to $39, averaging $16.97 with a median of $15. Twenty of the thirty-two sit inside Disney's stated $15 to $34.99 band, eleven fall below it and exactly one rises above. Three tapas a head — which is roughly how the place is meant to be eaten — comes to $50.91 before drinks.
The cheap end is the fun end. Three filled cones at $5 to $7: goat cheese with quince and walnuts, tuna tartare, raw grouper with escalivada. Ferran Adrià's classic and modern olives at $14. A pressed jamón and Manchego bikini at $15. Gambas al ajillo, which the menu itself calls "the very, very famous tapa", at $19.
The top end: José's taco with jamón ibérico de bellota at $24, the JALEO Burger on a ribeye patty at $24, Gambas a la Zahara at $30, a toasted-pasta 'Rossejat Negra' at $32, and Carne asada with confited piquillos at $39 — the only tapa above the band.
Cured meats are $17 to $19 each, or $44 for a selection of them together. Soups and salads $10 to $15, fried things $14 to $16, vegetables $11 to $15.
The paellas are priced by the pan and the menu says so. Arroz con pollo y verduras is $75 for two to four people or $145 for five to eight. Arroz Meloso de Mariscos $69 for two to four. Arroz a banda con gambas $165 and a seasonal vegetable paella $130, both five to eight. At the top of each party size that is $16.25 to $20.62 a head — which lands inside Disney's band and is the reason the band is not wrong.
One exception, and it is a big one: a paella of wild mushrooms and artichokes topped with a 22oz dry-aged Josper-grilled ribeye, $195 for two to four. At four that is $48.75 each.
Five large plates, $35 to $145 — half a rack of pork ribs $35, Mediterranean seabass $68, a 16oz rack of New Zealand lamb $98, secreto ibérico de bellota $105, and a 22oz bone-in dry-aged prime ribeye $145.
Five desserts $9 to $15, plus a tableside dessert experience at $49. An ounce of Royal Ossetra caviar can be added to anything for $95.
Portions
Tapas are tapas — one or two bites for the cones, a proper small plate for most of the rest. Budget three a person and order more if you are still hungry, which is cheaper than over-ordering at the start. The paellas take up to 45 minutes and the kitchen rings a cowbell when one is ready; order it when you sit down or you will be waiting for it long after the tapas are gone.
Allergies and dietary needs
Genuinely good, which Spanish menus often are not. Five vegetable tapas $11 to $15, two of the three cones are meatless, the olives at $14, and a whole seasonal-vegetable paella at $130 for five to eight. Pescatarians are spoiled — five seafood tapas $19 to $32 and two seafood paellas. Pork runs through the cured meats, the secreto and several tapas, and the Iberian ham is the point of half the menu, so this is a poor fit for anyone avoiding it entirely.
